
Growing up, breakfast was sacred. I had to have breakfast, and it had to have protein.
“You gotta have some protein in the morning, Russ. A big breakfast in the morning can last you the whole day!” -- my fawsha.
So, over the last several years, I’ve been searching for the working person’s breakfast solution. My criteria was that it had to be affordable, something that could be made in advance, yummy, something I could eat at my desk right when I got to work, and, of course, have protein.
For a while I tried making a yogurt-based breakfast, and this worked pretty well – I could make it the night before, bring it to work, add in lots of granola and honey and peanut butter (yes, peanut butter!), and it was pretty yummy, for sure.
The problem – yogurt is kind of expensive for a daily, filling breakfast, and I had to make it every night before work.
OKOKOK, let’s get to the point!
You should make this:
A quinoa-based breakfast with honey, apples, oranges, currants, walnuts, and honey.
It’s cheap, easy to make, yummy, one batch lasts pretty much the whole week….
Oh yah and it’s vegan and gluten free. Holler.
Quinoa: 1 cup, cooked
Apples: 2 medium-sized, diced
Tangerines (or organes or w/e): 2 medium-sized, diced
Walnuts: 1 cup, coarsely chopped
Peanut butter: 5-6 tablespooons
Currants: 1 cup
Honey: 1 tablespoon
Cook the quinoa. I use a ratio of one cup quinoa to two cups of water in a regular rice cooker. Easy peasy.
Combine the apples, tangerines, walnuts, and currants.
When the quinoa is all cooked, pour into a mixing bowl and then add the peanut butter right away. This way the heat of the cooked quinoa will soften the chunky peanut butter – you ARE using chunky peanut butter, right?? – and it’ll all mix well.
Stir in the honey.
Pour the rest of the ingredients into the quinoa/peanut butter/honey and mix it up!

Pack it down into a good-sized tupperware, throw it in the fridge, and don’t sweat about breakfast for the rest of the week!

I think this tastes fine cold right out of the fridge, but if you have a microwave at your work, treat yourself and nuke the stuff until it’s nice and warm.
